Notes

CRAB

I purchased fresh crab from Fresh Ideas Start Here in Burnaby, British Columbia. This was a special order that needed to be made one day in advance. 1/2 lb cost about $35 CAD, which is more expensive than usual because crab is currently out of season. If this was the beginning of summer, it would be closer to $20-25 CAD. Crab is probably one of my top 5 favorite seafoods. You can substitute crab with any other seafood of choice, such as prawns, which are more accessible and easier to find.

PASTA

The pasta I picked is slightly thicker than what I normally would use. La Molisana is a great brand made with durum wheat. Durum wheat offers protein, dietary fibre, and vitamins B, K, and E, as well as zinc, potassium, and thiamine. This pasta is ideal for weight loss if that matters to you, but of course, you can use your favorite brand of spaghetti! When cooking pasta, you want the water to taste like the sea, salty. It’s all about seasoning layers when cooking. If you are unsure, always under-season rather than over-season. You can always add more, but you can never take it away.

SAUCE

The main ingredient for this sauce is Black Truffle Sauce, which is made up of black truffle and mushrooms. Mikuni here in Richmond, British Columbia let me try out their Noble Black Truffle Sauce. You can put this sauce on anything, like breads, pasta, and proteins. It is most commonly seen in a Cantonese dish called Black Truffle Chicken, one of my favorite dishes at the restaurants here. You can find other Black Truffle Sauce brands on Amazon to use here.
