Rice
Sushi Rice is highly recommended for this dish. Donburi means rice bowl in Japanese. It uses sushi rice, known as shari or sumeshi: short-grain rice seasoned with a mixture of rice vinegar, sugar, and salt. Toppings can include meat, fish, veggies, eggs, and sauces. The stickiness of sushi rice helps the toppings adhere to the rice.
Spot Prawn
In Vancouver, the Spot Prawn (Pandalus platyceros) harvest season lasts about 6-8 weeks, starting at the beginning of May and ending around late July.
In BC, approximately 2,450 metric tonnes are harvested annually, with about 65% of the harvest coming from the waters between Vancouver Island and the mainland. Read more about Spot Prawns.
Sauce
In Japanese cuisine, “tare” [tah-reh] is a flavorful sauce used to enhance the taste of different dishes. There are many different kinds of Tare, such as Teriyaki, Yakitori, Shabu-Shabu, Nabe, and Sukiyaki. I won’t get into too much detail on the differences, but the one we are making here is a Teriyaki/Yakitori Tare, a sweet and savory sauce that creates a glossy, flavorful glaze.
