Macaroni
Because this is a baked macaroni recipe, you want to make sure that macaroni does not overcook in the pasta water. Keep it slightly under al dente to give a nice bite for the end result.
Cheese Sauce
Grating cheese is important. This allows cheese to properly melt. If you were to toss in a brick of cheese to melt, it would come out clumpy instead of cheesy. Remember, there is never enough cheese in a cheese sauce.
