Cactus Club Cafe Spicy Chicken Recipe

Chicken

In this recipe, I chose to use chicken breast since it gives a better yield of 1/2ā€ cubes, and all the additional trim can be used for chicken fried rice or cut into strips for my Chicken Lettuce Wraps recipe. Restaurants with supplier accounts can usually get large size trim, but an alternative for everyone else would be to go to Costco and buy their extra-large chicken breasts. The ones at my Costco also come with chicken tenders attached on the underside. If you do not have a Costco membership, that’s okay too. You can go to a local grocery store and buy chicken breasts, and make 1/4ā€ cube cuts instead, with a quicker cook time. This dish is a great appetizer or can even be a main by adding cucumber cuts for additional crunch and freshness, served with a hot bowl of steamed white rice.

Sauce

The specific sauce used in my recipe is Cock Sweet Chili Sauce. Perfect to use right out of the bottle. Despite its looks, it is much sweeter than spicy and goes great with chicken. When I was little, I would add this sauce to my instant noodle soup base to give more depth of flavor. When using this sauce on hot food, make sure to keep the sauce out at room temperature or gently heat in the microwave or saucepan before use if you plan on storing in the refrigerator. Hot food, hot sauce, and hot plate!

Dry Dredge

Super easy dry dredge! There are several seasonings listed on the Master List, but if you want something all in one like what I used in the video, check out Traeger Rub Garlic & Chili Pepper. There’s a blend of additional seasoning on top of what’s listed on the Master List! Of course, this gets mixed in with All Purpose Flour. You get a light bite of batter that gets soaked with sweet chili sauce.
