What is Hainanese Chicken Rice?
Hainanese chicken rice is a classic dish that originates from Hainan, a province in southern China, but has become immensely popular in various Southeast Asian countries, especially in Singapore and Malaysia. It consists of poached or steamed chicken served atop fragrant, seasoned rice, accompanied by various condiments.
The dish is characterized by its simplicity and balance of flavors. The chicken is typically poached or steamed with ginger, garlic, and sometimes pandan leaves to infuse it with subtle aromatics. After cooking, the chicken is chilled and sliced thinly, retaining its tenderness and juiciness.
The rice is cooked using the flavorful broth from cooking the chicken, along with garlic, ginger, and pandan leaves. This results in rice that is richly aromatic and infused with the essence of the chicken.
Hainanese chicken rice is typically served with several condiments, including chili sauce, ginger paste, and dark soy sauce. These condiments add layers of flavor to the dish, allowing diners to customize each bite according to their preferences.
Overall, Hainanese chicken rice is a beloved dish known for its simplicity, yet complexity of flavors. It's a comfort food staple in many households and is also commonly found in hawker stalls and restaurants throughout Southeast Asia.
Key Ingredient?
Chicken
Traditionally, Hainanese chicken rice is made using a whole chicken, often with the skin left on for added flavor and moisture. The chicken used is typically free-range or at least high-quality, as this contributes to the richness and depth of flavor in the dish.
You can use any type of whole chicken for Hainanese chicken rice, but it's commonly made with smaller chickens, often referred to as "kampung" or "village" chickens, which tend to have more flavor and firmer texture compared to commercially raised chickens.
If you're unable to find a whole chicken, you can also use chicken pieces such as thighs, drumsticks, or breast portions. However, using a whole chicken is traditional and allows for the most flavorful and tender results.
Regardless of the type of chicken you use, the key is to poach or steam it gently with aromatics such as ginger and garlic to infuse it with flavor while retaining its juiciness. This ensures that the chicken is tender and succulent when served atop the fragrant rice in this iconic dish.

What type of chicken do I use?
For Hainanese chicken, you can use various types of chicken depending on availability and personal preference. Traditionally, Hainanese chicken is made using a whole chicken, often with the skin left on for added flavor and moisture. The key is to use high-quality chicken to ensure the best flavor and texture in the final dish.
Here are some common options for the type of chicken used in Hainanese chicken:
Whole chicken: Using a whole chicken is traditional and allows for the most flavorful and tender results. Look for a smaller-sized chicken, often referred to as "kampung" or "village" chicken, which tends to have more flavor and firmer texture compared to commercially raised chickens.

Why do I need to hang my chicken?
The C-Stand was used to hold up the chicken while it’s poaching breast side down to keep the chicken from touching the steel so it wouldn’t caramelize. It’s a small tip that isn’t necessary for home cooking, but if you are detail-oriented, it matters!

What are the most important tips for this recipe?
Season the chicken by either brining it or rubbing kosher salt all over and inside the cavity.
Poach time will depend on the size of chicken being used. For a smaller chicken, you can poach for around 30 to 35 minutes.
Take the time to render chicken fat and use that oil to pearl the rice for additional flavor.
Use cooled down chicken stock to cook chicken rice, not water.
Shock chicken in lots of ice water to achieve gelatinous skin.
Is the chicken eaten cold?
Hainanese chicken rice can be served either hot or cold, depending on personal preference and regional variations.
In some places, such as Singapore and Malaysia, it's common to serve Hainanese chicken rice hot or warm, freshly cooked from the kitchen. The chicken is typically poached or steamed until just cooked through, then immediately sliced and served atop fragrant rice alongside the accompanying sauces and soup. This version of the dish emphasizes the tenderness and juiciness of the chicken and the warmth of the rice and soup.
However, in other regions, particularly in parts of China where Hainanese chicken rice originated, it's not uncommon for leftovers to be chilled and served cold or at room temperature. In these cases, the chilled chicken retains its tenderness and is often sliced thinly before being served alongside the cold rice and sauces.
Whether served hot or cold, Hainanese chicken rice remains a beloved dish appreciated for its simplicity, depth of flavor, and versatility.
