Notes

Rice

Long Grain Rice is recommended for this dish. It’s a must-have pairing.

Chicken

Curing chicken will take about 2 to 2.5 hours. Have this part done ahead of time. Cured Chicken can be refrigerated for up to 1 month. Keeping the chicken cool before pan searing gives a better skin presentation and keeps the tender chicken from falling apart.

Tradition

This dish is my take on a Filipino Chicken Adobo recipe. This is not the traditional way of making Chicken Adobo. I like to add twists to my recipes while being educated about and respectful of other cultures. Filipinos also use the Datu Puti brand for making Adobo. I ended up using a substitute since I’m trying to avoid having 5 different types of soy sauce.
