Re-Creation of Cactus Club Cafe | Vancouver, BC
What are Dirty Fries?
This is a secret menu item at Cactus Club Cafe that consists of perfectly deep-fried French fries tossed in house-made Creole butter and Cajun spice. This is my version of what is served at the restaurant with my take on enhanced potato fries that are crispier than any French fry you’ve ever had before.
Key Ingredient?
Creole Butter
Creole butter is a flavorful and often spicy butter preparation that is inspired by the culinary traditions of Creole cuisine, particularly in Louisiana. It is known for its rich and bold taste, combining the influence of French, Spanish, African, and Caribbean flavors that are characteristic of Creole cooking.
The exact recipe for Creole butter can vary, but it typically involves infusing butter with a variety of herbs, spices, and aromatics to create a robust and aromatic condiment. Some common ingredients found in Creole butter may include garlic, onion, thyme, oregano, paprika, cayenne pepper, and other herbs and spices that contribute to the unique Creole flavor profile.
Creole butter is versatile and can be used in various ways. It is often used as a finishing touch for grilled or roasted meats, seafood, vegetables, or even as a flavorful spread for bread. The butter adds depth, complexity, and a hint of spiciness to dishes, enhancing their overall taste.
Whether used to baste meats on the grill, add flavor to vegetables, or simply spread on bread, Creole butter is a delightful addition to the kitchen, infusing dishes with the bold and aromatic characteristics of Creole cuisine.
I will show you how I make Creole Butter to complement this dish perfectly.
FAQs
What If I Don’t Have It?
See substitution suggestions above. For this recipe, the combination of all other ingredients is mandatory to create this flavorful dish.
Why should I fold and not mush together?
If you want a nice and crisp French fry from the inside out, avoid mushing it together, as it will create a dense French fry. If you prefer dense, you can mush it together; this will also help the potato stick together better when refrigerating and makes it easier to prep.
Can I use other potatoes?
I would not suggest other potatoes only because the starch will not hold together as well, and the end result will not be as fluffy and tasty.
Why does my French fry keep breaking?
Potato needs to be refrigerated long enough to hold its shape. When rolling potato into a sheet, make sure to apply even pressure and hit the specified thickness. If the potato sheet is too thin, you will have a tough time brushing potato starch on all sides and transferring it to the freezer. If you form perfect bâtonnets before freezing, you will get a perfect end result.
Can I use pre-made French fries?
Of course! You can go to any grocery store like Costco, buy a bulk bag of French fries, deep fry, bake, or air fry them, and toss them in the Creole butter, Cajun spice, and green garnish to turn them “dirty”.
Should I double fry to make it crispier?
You do not need to double fry as long as the potato bâtonnets are frozen before deep frying. The French fries will get super crispy with one batch of frying.
