What is Tzatziki

Tzatziki: one word with many different ways to say it. It is incredibly simple, healthy and refreshing, the cool cucumber dip for hot summer days.

Seeding the cucumber and cutting it into a fine brunoise keeps the dip thick instead of watery. Serve it with my Calamari.

Tzatziki is the cool, garlicky yogurt sauce served across Greece with souvlaki, gyros and grilled meats. It is related to Turkish cacık and Indian raita, all built on yogurt and cucumber.

The one step that matters is squeezing the grated cucumber. Without it, the cucumber water thins the yogurt and the sauce turns runny within an hour.

Key Ingredient: Full-Fat Greek Yogurt

Full-fat Greek yogurt gives the thickest, creamiest tzatziki. Add sour cream if you want it even richer.

FAQs

Why remove the cucumber seeds?

The seeds hold most of the water. Removing them keeps the tzatziki thick.

How long does it keep?

Up to 3 days in the fridge. Stir before serving.

How do I keep it thick?

Use full-fat Greek yogurt and squeeze the grated cucumber in a clean towel until it is almost dry.

Can I use regular yogurt?

Yes, but strain it in a cheesecloth-lined sieve for an hour first so it is thick like Greek yogurt.

What do I serve it with?

Grilled meats, souvlaki, gyros, fried calamari, falafel, roast vegetables or simply warm pita.
